Verjus is a tart, grape juice, used in cooking as a natural acid to enhance the flavors of fresh ingredients. It is used wherever you might use vinegar, lemon juice, and cooking wine. The Zinfandel grapes that we make our verjus with come from 100% estate vineyards in Dry Creek Valley. All of our vineyards are farmed certified sustainable and we follow organic farming practices as well. Dry Creek Valley is known as one of the best places to grow Zinfandel in the world and we feel like our verjus is no exception. The grapes are all hand-picked in the early morning to maintain temperature and integrity of our fresh fruit and pressed immediately. Our main focus is on freshness, acidity, sustainability, and flavor.
