2016 Sparkling Wine

The 2016 vintage ended up being an ideal vintage for our Sparkling Wine. The Chardonnay had a larger than normal crop, so we thinned more aggressively than usual and the flavors were robust.  This being the second vintage for us to make a sparkling, we decided to pick at 19 brix of sugar to showcase the acidity.

  • Whole-cluster pressed for delicacy
  • Fermented in stainless steel tanks at temperatures of 55° to 60°F to retain vibrancy and freshness
  • This Chardonnay base wine was all clone 4 on St. George rootstock
  • Aging on the yeast for 2  years developed great complexity and pinpoint, lasting effervescence

Winemaker's Notes

Straw yellow in color with an aromatic bouquet of blood oranges, green apples and toasty brioche. On the palate, this wine is refreshing and light with an elegant dry finish and bright citrus flavors.
